The Banquet Sous Chef will be responsible for supervising the day-to-day running of the banqueting kitchen.
You will plan, organise, control and direct the work of employees in the Kitchen Department responsible for preparing food for banquet functions while ensuring quality and consistency. The management of food costs and production control are important to reduce wastage.
We are looking for an individual who has a solid knowledge of food and are passionate to develop their management skills within the hotel industry, have creativity and flair and the ability to provide guidance to others and are able to demonstrate good business acumen and a strong work ethic. The ideal candidate will have an outgoing personality and a can-do approach to any task.
- Good business acumen, excellent communication skills and a strong work ethic are required.
- A professional, innovative, and creative chef with the skills and fortitude to tackle the range of challenges.
- Proven and relevant experience of being accountable within the industry for the delivery of a high standard of formal dining, private dining, banqueting whilst demonstrating financial controls and value for money.
- Excellent knowledge of Health and Safety and allergens are key.
- Have a great knowledge of food costs and have a good understanding of food GP% and costing techniques so that profit margins are met.
- Applicants are required to have similar operational kitchen experience with a diversity of culinary expertise.
