Job Summary
We are seeking a proactive and experienced
Food and Beverage Manager to lead and oversee all F&B operations in our 3-star hotel, including
breakfast service, dinner service, café operations, and private functions. This hands-on role requires a strong leader who can manage a diverse team, maintain high service standards, and ensure smooth day-to-day operations—including
split shifts and close downs.
Key Responsibilities
Operational Leadership
- Oversee daily operations across breakfast, dinner, café, and function areas.
- Ensure smooth transitions between service periods and manage shift planning, including split shifts and close downs.
- Maintain high standards of cleanliness, presentation, and guest service throughout all F&B outlets.
Team Management
- Lead, train, and motivate the F&B team to deliver exceptional service.
- Manage rotas, shift allocations, and staff performance.
- Support recruitment and onboarding of new team members.
Guest Experience
- Ensure a warm, professional, and consistent guest experience across all F&B touchpoints.
- Handle guest feedback and resolve issues promptly and professionally.
- Collaborate with Front Office and Kitchen teams to ensure seamless service.
Functions & Events
- Coordinate and manage private functions, weddings, and group bookings.
- Liaise with clients to ensure event requirements are met and executed to a high standard.
- Oversee setup, service, and breakdown of function spaces.
Financial & Compliance
- Monitor budgets, stock levels, and supplier relationships.
- Ensure compliance with health & safety, food hygiene, and licensing regulations.
- Assist with menu planning, pricing, and promotions in collaboration with the Head Chef.
Requirements
- Proven experience in a supervisory or management role within hotel F&B operations.
- Strong understanding of breakfast, dinner, café, and function service standards.
- Excellent leadership, communication, and organisational skills.
- Ability to work flexible hours, including split shifts, weekends, and evenings.
- Knowledge of food safety, licensing laws, and health & safety regulations.
- Familiarity with POS systems and stock control procedures.
Desirable
- Formal hospitality or F&B qualifications.
- Experience in rural or destination hotels.
- Passion for local produce and Scottish hospitality.
