The Role

We're looking for an experienced Tandoor Chef to support the kitchen team of one of London’s newest, stunning and most exciting venues — Arcade Covent Garden! This is an exciting opportunity for a skilled Chef with strong tandoor gas oven experience from a high-volume, multi-cuisine background looking to take the next step in their career.

The ideal candidate has a passion for bold flavours, authentic tandoori cooking, thrives in a high-energy environment, and is eager to develop their career within a fast-expanding restaurant group.

As An Experienced Tandoor Chef At Arcade Covent Garden, You Will Be a Highly Versatile Chef With Strong Expertise Across Tandoor Cooking And Live-fire Preparation. The Successful Candidate Will

Prepare and execute tandoori dishes to the highest standard, ensuring consistency, flavour, and quality
Operate and manage the tandoor section confidently, with strong experience using traditional and modern gas tandoor ovens
Prepare and cook naan breads, rotis, kebabs, grilled meats, seafood, vegetables, and signature tandoori dishes during high-volume service
Control and maintain tandoor temperatures throughout service to ensure precision cooking and consistency

Skewer, marinate, and prepare meats and proteins using authentic spice blends and traditional preparation techniques

Monitor cooking times closely to achieve perfect texture, colour, and flavour profiles

Ensure the tandoor station is fully set up, stocked, organised, and service-ready at all times

Work closely with senior chefs to develop and refine tandoor-based dishes and specials

Minimise waste and manage stock efficiently within the section

Maintain excellent cleanliness, hygiene, and safety standards around all tandoor and open-fire cooking equipment

Support and mentor junior chefs working across the section

Manage your section efficiently during busy service periods while maintaining excellent organisation and prep standards

Adhere to all food hygiene and health & safety regulations

We'd Love To Hear From You If You

Bring 3+ years of experience as a Tandoor Chef in a high-volume, multi-cuisine environment
Have strong hands-on experience working with gas tandoor ovens in a professional kitchen
Are confident operating, maintaining, and managing a busy tandoor section independently
Have experience preparing authentic marinades, spice mixes, and tandoori mise en place from scratch
Possess strong knowledge of traditional tandoori cooking methods, temperatures, and live-fire cooking techniques
Are confident preparing naan breads, kebabs, grilled meats, seafood, and tandoori dishes during high-volume service
Have excellent knife skills, prep standards, and attention to detail
Thrive in fast-paced kitchens and remain calm under pressure during busy services
Bring a positive can do attitude and can work collaboratively across multiple teams
Have excellent communication skills and a strong desire to learn and develop

Have a natural passion for food and a strong understanding of bold global flavours

Are highly organised, disciplined, and take pride in maintaining high kitchen standards
