Passionné de chocolat depuis son apprentissage, Alain ducasse crée en 2013 Le Chocolat Alain Ducasse. Il en confie la responsabilité à l'artisan chocolatier Quentin Francis-Gaigneux qui confectionne artisanalement, dans l’une des rares manufactures parisiennes, le chocolat, de la torréfaction de la fève de cacao jusqu’au bonbon ou tablette de chocolat. L’ensemble des étapes est maîtrisé sur des machines « vintage » à taille humaine, et selon des méthodes traditionnelles à l’épreuve du temps.
